BAKERIES

Bakery Owner: Where Does the Day's Margin Actually Go?

It is 6 pm, the display case is half full of puffs and cookies baked at dawn, and tomorrow's cake order is written on a loose slip beside the till. The owner is not sure which of the two will cost more tonight.

We help you cost each item by batch, set up an order book for custom cakes, and decide how much to bake for each part of the day. We coach your counter and kitchen leads on the routines. We stay out of recipes, food licences or food safety; your baker and the licensing authority own those.

COMMON CHALLENGES

The pressures
we often see.

OUR FOCUS AREAS

Where the work
usually starts.

START THIS WEEK

Things you can do
before you call anyone.

  1. Tonight, before closing, count what is left in the case for your six biggest items and note it beside how many you baked. Keep doing it daily for a week before changing any quantity.
  2. Take your best-selling cake. Note every ingredient used in one batch from the stock book, add packaging and a share of gas or power, and compare the total with the shelf price.
  3. Hypothetical example: a batch of 40 buns uses ingredients worth ₹600 and 6 go unsold. Your real cost per sold bun is ₹600 divided by 34, about ₹17.65, not the ₹15 you assumed.
  4. Keep a printed order slip beside the till for custom cakes. Ask the counter to fill every field, including the advance paid, for each order starting tomorrow.

A PRACTICAL ENGAGEMENT

Start with the priorities
that matter most.

We begin by understanding how your business runs today, find the gaps, and agree the scope in writing. Recommendations are shaped around your team, your resources and your goals.

  • A batch costing sheet for your top items, with a routine for revisiting it when ingredient prices move
  • A custom cake order form and a daily pickup board for the counter
  • A bake-plan template by weekday and season, fed by the unsold-stock sheet
  • A role chart for baker, helper, counter and delivery, with a short weekly review

Not the right fit when: This is not the right first step if the pressing problem is a food licence, a hygiene inspection finding or a dispute with your landlord. Those need the authority or a professional first.
